Have you eaten kefir before? For those that don’t know, kefir is fermented greatness, often confused with yogurt but supercharged with lots more probiotics. Traditionally kefir has been made with dairy milk but for this recipe (and my gut) I used Darë Vegan Cheese coconut kefir!
Coconut kefir is made with either coconut milk or coconut water and fermented with kefir grains. The probiotics in the kefir provide fuel for the “good” bacteria in your gut! This gives them more power to fight potentially harmful bacteria + infection. Simply put, kefir like most fermented foods helps keep your gut healthy, happy and functioning!
Now, matcha and I are in love! Not only does it give me long lasting energy throughout the day but it also is packed with antioxidants, increases my focus and mental clarity all while having 50% less caffeine than coffee!!! AND, it tastes FANTASTIC! For this recipe and for my daily matcha, I use Matcha Nude.
So in an effort to make a fiber + probiotic rich delicious breakfast dish, I whipped up this scrumptious chia seed pudding! It’s simple, can be personalized and made ahead of time!
Ingredients:
1 cup + ¼ cup of coconut milk kefir separated (or plant based milk if your skipping the probiotics)
3 tbsp chia seeds
2 tsp matcha
1 tbsp real maple syrup
Fruit and Nutola are optional!
Recipe:
Mix together 1 cup of coconut milk kefir, chia seeds, matchan and maple syrup in a jar and store in fridge for at least 1 hour (I often make it a day or two in advance)
Remove from the fridge and add to a bowl.
Mix in remaining ¼ cup milk
Top with fruit, nutola and a little more maple syrup if your taste buds are asking for it!
Reminder: If you are interested in elevating the health of your gut and digestive system, fermented foods are a great addition to your diet! Other fermented foods I love are Jun (honey kombucha), sauerkraut, pickled onions + pickles.
