Are you a recovering ice cream-aholic? 🍦 I LOVE ice cream but unless it is vegan, it does not love me. So, what do I eat instead? 🍌 🍫 Frozen Chocolate Covered Bananas of course!

These are so easy to make. We do them in slices and on popsicle sticks. Here is how you make them:

🍌 Freeze 2 bananas either on popsicle sticks or slices for at least 2 hours. Be sure to lay them on either a compostable parchment paper or silicone mat for easy removal.

🍌 In a small pot over medium heat, melt 1/2 cup of Enjoy Life Foods chocolate chips or your fav dairy free chocolate and 1 tablespoon coconut oil. This will happen fast so stand by and mix frequently.

🍌 While chocolate is melting (or before) chop about 1/8 cup of your favorite nut finely.

🍌 Once chocolate is melted, dip bananas in chocolate. We sometimes use a spoon or two to help us get the chocolate in all the places. Immediately roll in chopped nuts.

🍌 Place back in freezer for at least 30 minutes.
