Nutnola: Homemade Grain Free Granola

The first time I did an elimination protocol to learn which foods cause inflammation or undesired symptoms in my body, oats waved a red flag 🚩 I had been gluten free for 7 years and gluten free oats had become a healthy staple. All of a sudden I could finally notice that they sat in my belly like a ton of bricks. 🧱


At first, I felt defeated and quite frankly pissed off. Another food to eat less of to optimize my experience. Ugh. 🤦‍♀️ What the hell universe!?


Once I was done being sad/mad I realized with the help of the grain free world that I could make my own “granola” with ingredients I love + love me back! This is when NUTNOLA 😉 was birthed into my life!


The concept is simple. Take your fav raw roughly chopped nuts, toss them with seeds, dried fruit, coconut, spices, real maple + a little coconut oil. Then lightly bake them and enjoy just like all other granolas. Give it a try and let me know what combo is your favorite! 🥣 Watch this Reel on Instagram of be making a batch myself!


Ingredients:

  • 2 cups raw chopped nuts - your choice

  • ½ cup raw seeds such as pumpkin, chia, sunflower or hemp seeds

  • ½ cup add-ins like dried fruit or coconut flakes

  • 2 pitted and chopped medjool dates

  • ½ tsp cinnamon

  • Dash of salt

  • ¼ cup real maple syrup

  • 2 tbsp melted coconut oil

Recipe:

  • Mix all ingredients together

  • Spread of a lined baking pan and bake at 325ºF for 20 ish minutes

  • Store in an airtight container

  • Eat on it’s own, with plant milk yogurt + fruit, plant based milk or coconut kefir!
