Have you ever made a cookie with just 3 ingredients? Have you ever made a cookie-free of gluten, eggs, dairy, refined sugar and any preservatives with just 3 ingredients? Before I found this recipe, making cookies I could eat was a project that could take hours. Now, I have this fun versatile recipe that is not only delicious but health-conscious and fun to make!
What you need:
Zest and Juice of any citrus fruit (Lime, Lemon or Orange)
Real Maple Syrup
Almond Flour
If you eat anything like me, these ingredients are almost always in your house. What do I mean by “real” maple syrup?
Real maple syrup is made from maple trees. The sap is harvested directly from trees and processed into what you know as a delicious treat to top pancakes and waffles with. Table syrup, on the other hand, is mostly a mixture of corn syrup and high fructose corn syrup and is often much cheaper, making it more predominant in grocery stores, refrigerators and restaurants. So do your body and your tastebuds a massive favor and stick to real maple syrup!
Now, on to the recipe:
Mix together: 1 TBSP zest, 2 TBSP juice, ¼ cup REAL maple syrup and 1 cup almond flour
Roll dough into together to form a ball, wrap the dough in a reusable beeswax wrap or plastic wrap and place in freezer for 10 minutes
Preheat oven to 350ºF
Roll dough into tablespoon-size balls. When placing them on a lined baking sheet, know they don’t spread much, so they can be close.
Using a wet fork, press gently into the cookie in two different directions, making the pattern seen in the picture, just like the peanut butter cookies you may have made as a child.
Bake at 350 for 9-12 minutes. Be sure to watch them and don’t let them brown.
Now, this is important, they must cool COMPLETELY on the pan.
Once cool, enjoy!
Yields 12 cookies and can easily be doubled
I love making this recipe with my nieces and nephews when we vacation together. They are fast, easy and have many kid-friendly steps. They also do not require any electric mixers, as the ingredients gently blend together with just a fork.
