Loaded Vegan Nachos



Just because you eat gluten + dairy free doesn't mean you need to miss out on the classics! I had actually given up on nachos, because I don't love many shredded vegan cheeses. But, overtime, I have eaten pizza without cheese + loved it, so why couldn't I make nachos without cheese?


This recipe is loaded with healthy veggies + absolutely no crap! Give it a try + let me know what you really think!


P.S. If you can't get your hands on vegan queso or sour cream, still give this recipe a chance + consider adding a salsa on top. 😋


What you need:

  • 11 ounce bag tortilla chips - I prefer Siete grain free tortilla chips

  • 30 ounces black beans, drained

  • 4 ounces canned green chiles, drained

  • ¼ cup red onion, small diced

  • 1/3 jar of Sabor Mexicano vegan queso. We also love options by Darë Vegan Cheese + Trader Joes.

  • 1 teaspoon garlic powder

  • 1 teaspoon cumin

  • ½ teaspoon onion powder

  • ½ teaspoon chili powder

  • ¼ teaspoon ground oregano

  • ¼ ground black pepper

  • Pinch cayenne pepper

  • Cherry or grape tomatoes, sliced

  • Avocado, diced

  • Cilantro, roughly chopped

  • Chives, chopped

  • 1-2 lime wedges

Step by Step:

1️⃣ Preheat oven to 400°F.

2️⃣ Line your baking pan with compostable parchment paper

3️⃣ In a medium bowl, toss together beans, chiles, red onion + spices until completely combined.

4️⃣ Place tortilla chips on the baking sheet in a single layer. Sprinkle with bean mixture + top with vegan queso.

5️⃣ Bake for 10 minutes.

6️⃣ Turn the oven on high broil and cook 1-2 minutes.

7️⃣ Remove from heat and let cool 2-3 minutes.

8️⃣ Garnish nachos as desired with cherry tomatoes, avocado, cilantro, chives, lime slices + vegan sour cream.

9️⃣ Serve warm + crispy!
