Blueberry Hemp Salad


It can be challenging to come up with fresh ideas for lunch, especially when there are no leftovers. Salads can get boring and sometimes we need a fresh perspective. Here is my new perspective as we enter blueberry season!


Truth be told, this salad is my new jam. I especially love the easy homemade creamy tahini dressing!!


Salad Ingredients:

  • A bunch of my fav greens to fill my bowl - Ive been digging butter lettuce, spinach + arugula lately

  • A generous amount of sliced cucumber

  • 1/4 cup blueberries

  • 2 tbsps organic raw hemp seeds - give me that plant protein baby!!

  • any other veggies of your choice!

  • top with fav dressing (vinaigrette is great) or 👇

If you’ve have the time, I highly encourage you to whip up this 3 minute Tahini Dressing!!


In a blender or food processor combined:

  • 1/4 cup tahini

  • Juice from half a lemon

  • 1 garlic clove

  • 1/3 cup filtered water

  • salt +pepper to taste

Blend her up, drizzle over your salad + store any leftovers or share with someone you love! Happy Eating!
